1/2 | cup | red onion, chopped | |

1/4 | cup | fresh cilantro, chopped | |

1 1/2 | tablespoons | jalapeno, minced and seeded | |

1/2 | cup | salsa, prepared (refrigerated-style) | |

salt and pepper to taste | |||
|
In a large bowl, combine black beans, golden hominy, avocado, yellow bell pepper, red onion, fresh cilantro and jalapeno. Add salsa; gently toss. Taste and add salt and pepper as needed.
